LOL! Damn straight we should! Oh and until you get to EOS Canon 5D bodies JPEG in the 30D/20D/350D/400D will never capture color 100% correctly. At least it's what I have found.
I shoot RAW/JPEG all the time and compare for every shoot just to delete 90% of the JPEG's. This is especially true with Reds even when changing color settings in the menu (so far).
To me it's about having a digital Negative that I can use to it's full potential to get the client the best possible photo I can.
DO a test. Shoot about 10 pics of a red car in "RAW/JPEG" mode. check them out side by side. ou will be shocked by the difference and how wrong the JPEG gets the colors.
