It is not true that a 0w30 will be too thin. All multigrade motor oils act like all other fluids, they are still thicker when it gets cold and thinner when it gets warm. The only difference is that multi-grade oils don't see as much change in their viscosity (how thick/thin they are) than a stright single weight oil (ie SAE 30).
My lame attempt to make charts below isn't exaclty correct but it works to make my point. Also remember the higher the viscosity number the thicker the fluid is, and vice versa.
SAE 30
At 0 degrees viscosity is 200
At 100 degrees viscosity is 100
At 200 degrees viscosity is 10
SAE 10W30
At 0 degrees viscosity is 175
At 100 dgrees viscosity is 75
At 200 degrees viscosity is 10
SAE 0W30
At 0 degrees viscosity is 140
At 100 degrees viscosity is 60
At 200 dgrees viscosity is 10
As you can see at 200 degrees (running temp) all oils thin down to the same viscosity, but a 0W30 won't thicken up as much as the other two when it gets cold.
Now the GC is a borderline 0W30 weight oil. It's almost a 0W40. So you should take that into consideration. I like to run Motul 300V, but next oil change I think I'll go with Motul E-Tech Lite, which is a borderline 0W30, but in the other direction. Almost a 0W20.
