First thing i might try is to see that the coolant temp sensor is working correctly. Plug in a scan tool to OBD2 conector and see what temps the sensor is reading on a cold engine and see if the temps climb as the engine gets warm.

well first find out and see that its working correctly. If its faulty then replace it of course but if it reads ok, then it could be your gauge cluster that you need to replace. A wire, the board, resistor, or motor to the needle could be whats at fault if sensor reads good.
