plug it back on w/o the needle. then turn on your ignition to the 2nd stop (not turning on the engine). wait a couple seconds. turn off your car then the needle should have reseted back to 0's

Here's how I have mine:
Coolant temp: the bottom edge of the needle hovering over the top of the first water wave on the coolant temp icon.
Fuel: the bottom edge of the needle even with the bottom edge of the "almost out of gas" LED circle
speed and tach: the bottom edge of the needle even with the bottom edge of the zero mark.
The fuel and coolant temp gauges are approximate anyway. The speedometer and tachometer are "calibrated", but if you get close to the zero mark, you should be good.

Do not try to set them with the gauges plugged in. The gauges should be out of the car when you do it. The needles will not reset to zero automatically. The system simply makes them sweep full scale and back and forth, it doesnt know where they needles are and reset them for you. If they are not installed in the correct position they will not ever be correct.
Press the needle part of the way on at the max position (not all the way down on the spindle thought)
Turn backwards (you will feel the spindle hit its stop and the needle will be slipping on it) until it is at its zero
When it is in the proper place, press it the rest of the way down, leaving approx 1/8" gap between the needle base and the gauge face.
Fuel should be zeroed at approximately the middle of the low fuel light.
Temp should be zeroed at the same position as the fuel
Speed and tach should be at zero. To be more precise, the bottom of the needle should be at the bottom of the zero line.
