Wheel offset question

If I put some 17x8 rims and keep the 45mm offset would it rub or should I get a 35mm offset?

With your Springs set up, you should be alright with either one. The real ? should be, "Do I want the 'tucked' (+45 offset) look or the 'flushed' (+35 offset) look? I personally would go with the +35 offset.
