I cannot find the pics now but there was a truck-ish option in Japan for the First Gen xB-looks like a Subaru Baja sort of-go to YouTube and watch the Toyota bB commercials (the Murman/Maid one has them)
There was also a Safari company that made a truck out of the 2nd Gen xB-can't find the photos now-it was just for a show but shows it can easily be done.

My rear deck is modular. I can remove the rear seat and put in the deck in less
than 30 minutes. The sub box and amp section is in the foot well and then the
rear section has latches underneath to hold them together. All the wiring for the
amps is done with heavy duty plugs so I can hook it up easy. The wife said it can't
be permanent as I need to get the kids from school and need a back seat.

Thanks, I have been making those on the side as a little experiment. Here are a few
that I made for a couple of the local boxes. I'm working on a "BB" logo and should
have it done next week. I've made one for "Scinergy" as well.

I found this one a while back think this is what you are talking about, kinda
I also found out through my own experiences that if you slide the front pass seat all of the way forward, take the headrest off, fold the seat down, then take the headrest off the back seat headrest and fold that down.
With it all folded down you can fit 8ft 2x4s and 2x6's and still close the hatch. Don't forget to put blankets down or you will scratch the interior, I know it happened to me.
