Having to roll the lip has much more to do with offset than it has to do with diameter. 20" wheels won't require more lip rolling than even a set of 15s if the offset is right. You will become more limited in how low the car can actually go though.
As far as ride, it probably wouldn't be too much different than the 215/35/18s my wife has on her xB depending on what size tire you got. The ride is still very acceptable for a daily driver. You will just want to be more cautious with your driving and take care to avoid pot holes, etc.
